Vitamin D and Disease

Death numbers through chronic illness associated with vitamin D deficiency, are conservative in this article. There are at least twenty types of cancer now known to be associated and many other diseases. Fifty years ago vitamin D was all about  bone health – the absorption of calcium and prevention of rickets. Fifty years from now, we will know more and it will be worse – more cancers, infections, autoimmune diseases etc. Vitamin D is vital to life.

We now know that there are various forms of vitamin D (D3 being the most bio-available and D2 less so) and that this “vitamin” is a steroid hormone – not a true vitamin. As a hormone, it can penetrate virtually every cell in the body (and therefore affects every system) and influences our DNA. In other words, it is essential for life and health. It was the sun that brought us life on this planet (and a couple of other things) – and not surprisingly, the sun remains the best source of vitamin D3 but has many other health benefits too.

Couple of things:
If you intend to take a supplement (always best to sunbathe and it’s free), please take vitamin D3 plus K2 as they work in tandem. (In supplements it is often D2, so check the label for “D3″.) Also make sure your magnesium intake is good. (Organic tomatoes, spinach and other green veg, avocados, fatty fish, nuts and seeds).
Our vitamin D source is SUPPOSED to come from the sun – that’s nature at work. Fortunately, we can store lots of it so we sunbathe (safely – see this post) in the summer and our D stores and food tide us over winter.
Vegetable sources of vitamin D is in the form of D2. Grazing animals can easily convert this to D3 – which is why animal sources are the best. Our ability to make this conversion is tenuous and cannot be relied upon.

Good food sources of vitamin D3 – organic wherever possible:
Eggs from pasture-raised hens (they need vitamin D too!)
Butter from grass-fed cows (and they do!)
Lard from outdoor pigs (err..see above)
Fats and offal from all outdoor animals
Full cream milk and cream (best raw)
All full cream cheeses but Brie, Gouda and some blue cheeses have K2 also.

Isn’t this the easiest “vitamin” in the world to find?

 

 

“Why Do Some People Suffer Gut Problems More Than Others?” (IBS Part 2)

This post starts to answer some of the questions I posed last time. Everything hangs on your immunity. It really is the be-all and end-all of wellness or illness. Let me tell you a story, a bit scary in places but it all ends happily ever after.

When you were developing in your mother’s womb, your gut was sterile. When you were born, you were covered with the bacteria and other microbes that were in your mother’s vagina – the same ones that were in her colon. (Told you it was scary!)

Walking BarefootYou were put to the breast where you and your brand new gut microbes were nourished and you all thrived. As you grew you were given a good diet of eggs, meat, healthy fats, vegetables, fruit and quality dairy products. Playing was fun and you crawled around the garden in the sunshine, tasting the worms and making mud pies. (Well I did!)
Childhood illnesses were encountered and fought off and even when antibiotics were necessary, you were quick to recover on your nutrient-dense diet. The status quo is maintained and you continued your healthy lifestyle. As an adult, you are healthy and wellness is easy.

 

Now another even more scary story which does not end so happily.

When you were developing in your mother’s womb, your gut was sterile. When you were born, it had to be by Caesarian section as your mother was in difficulties and you had to go straight into an incubator. You had not picked up your dose of mum’s gut microbes but you got a little of everyone else’s flora from being handled. As your mother was unwell for a while, you were fed formula milk and you and your new – but unbalanced – gut microbes were nourished.

French FriesYour diet was mostly quick and easy foods as your mother went back to work and you play time was mostly indoors at the nursery. You suffered all the childhood illnesses going around at the time, and needed several courses of antibiotics which upset your tummy. As an adolescent you settled on a high carbohydrate diet as the government advised.

You had a holiday abroad, got a stomach bug from which you partially recovered but ever since, your stomach has been a problem. Foods you were able to eat become ones you now can’t tolerate. You suffer gas, diarrhoea, stomach cramps  gurgling and more. As an adult, you don’t really know what wellness is.These symptoms can be due to IBS, but may progress to being celiac disease, ulcerative colitis or Crohn’s disease (IBD). All these diseases are autoimmune conditions.

I have made these stories simple but there are lots of other factors that contribute to how you will fare health-wise. Vaccinations, household cleaning products, exposure to sunlight, accessible good quality food etc. – if/how/when these are done will all impact on your immunity.  The problems encountered in the second story can be overcome as long as the very basics are observed – nurture of the immune system.

Real Wellness and How I Came to My Conclusions

I have had a long career as a nurse and it gave me a bit of insight into what is happening to us. It occurred to me years ago, that people were becoming sicker and not healthier despite the government guidelines for health and less people smoking. There were a few questions about health that needed answering. Some of them about what is happening today, but some regarding our evolution.

Dinosaurs and Cavemen

  1. It is likely that our genes have not changed since Paleolithic (Paleo) times, so why do we believe that the diet now advocated as “healthy”, would be better for us than the one we evolved with?
  2. How did we survive with no dieticians and nutritionists/fitness instructors/diet books and the internet?
  3. Did cavemen eat cornflakes or run marathons?
  4. Why are we getting sicker but “living longer”?
  5. Why did my mum always cut out bread and potatoes to lose weight then regain that weight when she resumed eating them?

These are my answers to the above questions:

  1. All animals need protein, fat, vitamins and minerals and (maybe) carbohydrates. A cow’s gut is unique in that it can break down grass and weeds to the very basic building blocks. From this it can then rebuild these blocks to form proteins, fats etc. This process is also why it has to eat all day! Its stomach has four chambers and its intestines are about half the length of a football pitch! We do not have the guts for this vegetarian diet. Our gut is mainly designed for meat eating but nature has ensured the maximum chance for our survival so we are also able to digest some other foods.
  2. Our taste buds and other responses to food eaten, tell us what our digestion can cope with. Are we going to eat grass? No! Are we (on a regular basis) going to eat seeds? No! Are we going to lob a stone at a duck and roast it? Oh yes! (We have been cooking for at least 400,000 years) If you are now wondering why it is that you fancy a cake with your coffee, the reason is simple. In a cake we have combined protein, fat and carbohydrates and our taste buds are totally confused. The fat and protein are detected so they give the green light.
  3. No, our ancestors did not eat corn and run around like mad things – unless it was really essential. Collecting seeds was a labour of necessity not desire 40,000 years ago. This would have been an unnecessary energy expenditure most of the time. Using stealth, skill, team work and short bursts of energy would usually ensure that the family were fed good quality food in the form of wild animals. There would have been little edible vegetation for much of the year.
  4. There are several reasons why the statistics are showing that we are living longer both from Palaeolithic times and from a couple of hundred years ago. Cavemen died from severe injuries and overwhelming infections because there were no doctors. There is little evidence of modern disease until 5-10,000 years ago. Since Victorian times, much has changed, not just our diets. We have better sanitation, cleaner air, better medical care for injuries or infections and importantly for the statistics, less neonatal deaths.
  5. In the mid 1900s, the way to lose weight was to drop bread, cakes, potatoes and sweets. This worked because there was no need for the fat storing hormone insulin to metabolise these carbohydrates. During the 80s, the government intervened with a recommended diet and we all fell for it. The NHS took it as gospel and the word recommended was forgotten. So from this time we have eaten lots of highly processed carbohydrates, less fat and protein – and bingo! We are now a nation of obese diabetics with irritable bowel syndrome and autoimmune diseases! Yes I’m being facetious but the point has to be made that we are now sicker than ever, with diseases that were largely unheard of 100 years ago.

So this is where I started. It just made so much sense whereas before I was struggling to put the science behind the advice I was giving as a nurse. Now there is not only the backing of good science but for me, the history of us to give credence to the advice I now give. Natural and unprocessed food that has been produced the way it should be and a life, living as close to nature as is possible.

Vitamin D and Gut Problems

Over the last ten years, inflammatory bowel disorders (IBD) have steeply increased in both adults and children. They are autoimmune illnesses. This is a very serious situation as both IBD – ulcerative colitis and Crohn’s disease – are usually controlled with steroid drugs and many will go on to have bowel surgery – more than once in many cases. Celiac disease – a severe gluten sensitivity – is also thought to be an autoimmune disease.

Walking BarefootThese diseases are capable of disrupting normal childhood activities and bringing isolation to sufferers. They are characterised by persistent diarrhoea, sometimes accompanied with blood and mucus; severe stomach cramps; anaemia; tiredness and often, emotional upsets. It is a truly catastrophic illness for all involved.

As usual, I believe that it is a nutritional problem. If all of us were able to feed on the diet we are programmed for and obtain sufficient sunshine to keep our vitamin D levels in an optimum range, I doubt there would be very much in the way of chronic illness – not in adults or their offspring.

But things are constantly changing. We largely live indoors, use the car, eat fast microwaved food and know little or nothing about the art and science that should go on in a kitchen.

With this in mind, how can we and our children expect to stay well? Wholesome diets for human beings encompass all the known nutrients for our health. But what of the nutrients we don’t yet know about? We shouldn’t worry. Nature takes care of that providing we eat the food we are genetically programmed for. (Plenty of information about this in my other blogs.) Anything else just wouldn’t make any sense. After all, wild animals don’t have nutritionists and books to guide them, they just eat what they instinctively know is right.

One of the biggest problems that the western world faces is vitamin D deficiency – yes, here I go again! We have carefully slathered on the high factor sunscreen before venturing out to prevent skin cancer but effectively screened the UVB rays that create vitamin D in our skin – and thus left us wide open to a multitude of other cancers, infections, porous bones and gut problems amongst others. This is devastating and will lead to a very poorly world indeed – and it’s already started.

People with gut disorders often have low vitamin D levels in their blood. There is speculation as to whether this is the cause or effect of gut problems but to me there is no doubt – our vitamin D needs to come from the sun, not in supplement form. This accompanied with a healthy diet could protect us all from from these life-changing illnesses. Evidence is emerging that the diet of a pregnant woman also affects her offspring – for better or for worse.

The Price of Health – part 1

Success is always measured by money isn’t it? We all need money to live and I’m not knocking it, but cheap food is not a good investment in our health. Apart from anything else, if you haven’t got your health, you will have nothing – maybe not even the ability to work.

file0001911591111Many diseases are on the increase. Auto-immune diseases such as Crohn’s disease,  multiple sclerosis and rheumatoid arthritis; gut disorders such as irritable bowel syndrome (IBS) and food sensitivities; allergies such as asthma and to peanuts; even rickets (due to vitamin D deficiency) has returned and the list goes on and on.

What has happened? Why, when we “know” so much, are we seeing more chronic illness? The answers are simple but they are interpreted wrongly (accidentally or intentionally).  In so many instances, the information released to the public becomes very complicated.  It is usually given in sound-bites (eg. in newspaper articles) and the research on which information is given is often flawed. This of course means that the advice will change in a few years, by which time much damage is already done. (Remember how we were told to eat polyunsaturated fats instead of butter? Not now!)

Before I explore why good health has become complex and elusive and why you have to spend more money on food, I will itemise the reasons why I believe chronic illness is now a way of life:

1)    Our food has been tampered with

2)    Medications

3)    We have been told to stay out of the sun

4)    We have been advised to eat a diet which is largely unsuitable for human beings

5)    We over-exercise or not at all

6)    Famous people are putting their names to big brands

7)    Greed for money and power, has overtaken our population

8)    Smoking

9)    Overuse of germ killing household and personal products

There are many other factors involved but as I want to keep this reasonably brief, I will not be expanding on them. They include vaccinations which have been written about extensively – some articles are here.

It may be interesting for you to see the pattern in the illnesses frequently suffered:

Wrong diet as children +
Lack of the sun +
Persuasion to eat wrong foods (No.4 as above) +

Insulin sensitivity – obesity, type 2 diabetes, high blood pressure, poor circulation

Loss of vision, infections, loss of sensation in feet, gangrene, strokes, heart disease etc.

Whilst treatment for chronic symptoms may prolong life, they will not cure. They will almost certainly produce side effects which range from unpleasant to downright dangerous.

Is this what we want? Or how about this one? – another frequently seen scenario:

The Getting of Immunity

An elderly relative recently moved into a nursing home and I was offered some of her effects. During the clear-out of her home, I was shocked to see the amount of cleaning products that she was using. These products always have warnings on them, but that means they contain toxins!

We are led to believe that we need a different product for every job and the ads are obviously very effective. In fact go into any large supermarket and you will see a whole aisle of these products and they are not cheap. Quite apart from the fact that they are largely unnecessary, what about the chemicals? These are not innocent and can be hazardous when wrongly used and/or for people with respiratory or skin problems. Good old soap and water will do a great job without upsetting the delicate microbial balance. It is quite amazing what can be done with vinegar, baking soda and lemon juice!

Potentially, the biggest problem with many of these substances is their germ-killing ability. In a hospital, it is essential to keep infection to an absolute minimum – for obvious reasons so their use is necessary to prevent cross-infection – ill people are very vulnerable. It is at the very least a contributory factor that the nation’s generally poor immunity generates the need for stronger and stronger antibiotics and antimicrobial agents. Chronic illness such as asthma, eczema, autoimmune diseases, gut problems and so on are increasing year on year are whilst our immunity is decreasing – thus making us that much more susceptible. What is missing is a robust immunity.

This piece of research highlights the importance of building a healthy immune system – the best insurance policy for a child’s future life. Allowing children to walk bare-foot, having pets, playing in the garden and digging the soil – are all measures that allow a healthy immune system to develop. Work-surfaces must be kept visibly clean – but not sterile.  It is possible that when an immune system is busy naturally making antibodies to antigens, it won’t be bothered with a bit of cat fluff, feathers or pollen.

We are also rather paranoid about food beyond its sell-by date. Maybe it is prudent with packaged foods as there is no way of knowing how long they’ve been on the supermarket shelf – but foods like cheeses, meat and vegetables need considered opinion. My mother used her sight, sense of smell and sometimes even taste to see if a natural raw food was still edible. Many natural foods contain enzymes and other substances beneficial to the immune system – cheeses for example. Naturally fermented foods such as cheeses and yogurt, sauerkraut, (properly prepared) salami and so on are teeming with beneficial bacteria. The inclusion of these foods into the diet can help build good immunity.

Lastly, here is a little experiment for you. Have your usual shower and use a sponge/flannel but no shower gel. You will not smell! It is fine to use a little, two or three times a week but it is the water that cleanses you. In this way you will leave the skin to care for itself (which it does exceptionally well), the ph is intact, the oil isn’t stripped and the microbes are left to protect you.

We are supposed to live in harmony with microbes – we can’t exist without them so let’s stop the massacre!
